Sunday: Costco Restock Day, Salmon Lunch & Back to a Full Fridge
This morning the kids had the bacon I cooked yesterday, and I also prepped my husband’s breakfasts for the next couple of days.
I’ve shared this before, but it’s one of my favorite little time-savers. I pan-fry three eggs until they’re just set enough to flip. As soon as the second side is barely cooked, I transfer them to a glass container. They still have soft, runny yolks, and when he microwaves them in the morning, they warm through perfectly without overcooking. I’ll add some cooked breakfast sausage and an almond flour tortilla when I pack his breakfast, and it’s a quick meal that’s ready to go. I pulled out a package of frozen pork sausage that I cooked a few weeks ago. I LOVE having this type of thing in my freezer. I can use it for easy breakfast proteins, add it to a pizza, put it in chili…it’s great!

This morning my husband even looked in the refrigerator and joked that it was looking pretty empty.
I laughed because when he notices the fridge is empty, you know it’s definitely Costco day.
Costco Restock
I took my 11- and 13-year-olds with me, and while we were there we filmed one of those “Netflix documentary” style videos that are trending right now.
We got there right when Costco opened, and I happened to spot an aisle with the office chairs on display. It was the perfect place to film because hardly anyone was around. It ended up turning out really funny, and I posted it earlier today. Filming in public isn’t easy, but it can turn out really funny!
At checkout we were joking with the cashier because we always play “Price Is Right” and guess whether the total will be over or under a certain amount.
Today’s total?
Over $510.
To be fair, we were out of almost everything—including boring things like salt for the water softener—so it was definitely a full restock.
For proteins this week I bought:
- Chicken breasts
- Chuck roast
- Ground beef
- Brats
- Wild-caught salmon
We should be in good shape for a while.
Lunch
Since the salmon was fresh, I cooked it for lunch as soon as we got home. I don’t mind letting chicken or beef sit in the refrigerator for a few days, but fresh fish is different. I like to cook it right away and use it within about 48 hours.
One of my daughters is allergic to salmon, so alongside the fish I baked some frozen panko-breaded chicken fillets and served those on buns, Chick-fil-A style, for the kids who weren’t having salmon.
The rest of us made little salmon platters with:
- Salmon
- Seaweed
- Lemon
- Avocado salsa
- Different dipping sauces
My teen used mayonnaise with soy sauce, while I used liquid aminos.


My almost-four-year-old loves what she calls “pink fish,” and when we got home from the pool this afternoon she actually asked for another bowl of salmon as her snack. I was more than happy to give it to her!

Dinner
Tonight we went to my parents’ house for our usual Sunday dinner.
As always, I came home with leftover steak and lots of sides, which means lunches are already halfway planned for tomorrow. My mom bought the T Fal XXL air fryer. It’s perfect for our family dinners so she has another large surface area. I made roasted broccoli in it tonight.

I also packed my husband’s lunch for work and got everything stacked neatly in the refrigerator before heading to bed.

Looking Ahead
Tomorrow will definitely be a cooking day.
I’m planning to:
- Cook the chuck roast.
- Prep and marinate the chicken breasts so they can soak up flavor before grilling later this week. I really think chicken breast benefits from marinating for at least 24 hours.
- Decide what to do with the ground beef. I’m leaning toward making burgers and then cooking whatever is left to freeze for future meals.
