Sunday: Restocking the Fridge & Sunday Dinner at Grandma’s
This morning was another easy breakfast thanks to Friday’s waffle marathon.
The kids finished off the last of the bacon and enjoyed more homemade waffles. We still have plenty tucked away in the freezer because whenever we make waffles…we make waffles. People often ask me HOW I reheat waffle, bacon, bagels, etc. in the morning when I don’t own a toaster or toaster oven. This is how I do it. 1/4 sheet pan, lined with parchment paper, in the oven, set to 350ºF. It takes like 5 minutes and works so well.

I also prepped my husband’s breakfast for the next few mornings. I crack eggs into a really hot pan, flip them RIGHT when they are starting to turn white, then transfer to a glass container as soon as they are just barely set. He adds some cooked pork sausage and an almond flour tortilla, then microwaves them.
Restocking the Protein
Since we went to Costco yesterday, I had plenty of raw protein in the refrigerator—but I hadn’t had time to cook any of it yet.
The only cooked protein I really had left was a little chili from Friday, so before lunch I decided to restock one of my favorite staples: taco meat.
I pulled one of my flat bags of cooked ground beef from the freezer, microwaved it for about 60 seconds just to loosen it from the bag, then broke it into pieces and added it to a lidded skillet with a small splash of water over medium heat.
Because I freeze the meat in such a thin layer, it defrosts in less than 10 minutes with just an occasional stir.
Once it was hot, I stirred in taco seasoning. Sometimes I make my own seasoning blend, but honestly, for quick lunches I really like the McCormick taco seasoning packets. My family likes the flavor, so I always keep a few on hand.


I also reheated leftover rice from earlier in the week, and lunch became a build-your-own meal.
Everyone chose what they wanted:
- Taco bowls
- Nachos
- Tacos
Exactly the kind of flexible lunch I love.

Podcast Recording
While everyone was happily eating lunch, I took advantage of the quiet house and recorded a podcast with my friend Virginia from Wellness with Virginia.
We talked about life as content creators, shared a little behind-the-scenes of Instagram, and chatted about HomeBeginsWithLove
It was such a fun conversation, and I’ll definitely share it when the episode is released.
Afterward, I finally sat down and enjoyed my own taco bowl.

The best part? We now have plenty of taco meat ready for lunches over the next few days. Taco bowls, nachos, quick wraps—it’s one of those proteins that never goes to waste around here. I’ll probably end up bringing some to the pool for a snack too.
Pool Afternoon
We squeezed in a quick trip to the pool this afternoon.
Since we knew it would be a short visit, I kept snacks simple:
- Cheese sticks
- Chips
- Grapes
Sometimes simple really is enough.
Sunday Dinner
After showers, we headed to my parents’ house for our weekly Sunday dinner.
My mom always starts with a spread of appetizers before dinner, and tonight she served steak with potatoes and vegetables.
As always, we came home with leftovers, including:
- Steak
- Potatoes
- Vegetables
- Her gluten-free, dairy-free chocolate cupcakes

Those cupcakes are always a family favorite.
Looking Ahead
Going into tomorrow, the refrigerator is in a good place again.
Between the leftover chili, freshly made taco meat, and leftover steak from tonight, we’ve got plenty of cooked protein ready for lunches.
Tomorrow I’ll start cooking the fresh Costco proteins so the refrigerator is stocked again for the week ahead.
