Wednesday: Boat Sandwiches, One Last Lake Day & Taco Night

Wednesday was our last full day at the lake, so the goal was pretty simple: spend as much of it on the water as possible.

Easy Boat Sandwiches

We’d done a lot of fruit, vegetables, chips and snacky things on the boat throughout the week, so this morning I decided we needed something a little more substantial.

I made the world’s simplest little sandwiches.

Literally meat and bread.

I had bought turkey and ham deli meat from Costco specifically for this trip. I don’t buy deli meat all that often, but this was one of those times when I absolutely wanted the easy button.

I made a bunch of sandwiches and cut each one into quarters. This worked really well on the boat because I could just pull out a little sandwich and hand it to someone without everyone needing an entire meal at once.

Sometimes vacation food does not need to be impressive. It just needs to be easy to hold while you’re sitting on a boat.

One More Full Day on the Water

And we spent basically the whole day out there.

Lots of tubing. Lots of boat time. Lots of snacks.

And yes, lots of Daphne sitting on my lap.

Boating with a four-year-old is a very specific experience. She had a great time, but when the boat is moving fast because we’re pulling someone on the tube, I like having a hand on her even though she’s wearing her life jacket.

So we did a lot of this trip together. Very, very together.

I also managed to get a picture of Chris and me, which is photographic proof that Mom and Dad were, in fact, on this vacation together.

Taco Night

That evening, my mom was making dinner, so I helped her put together a big taco dinner for everyone.

I took approximately zero pictures of it.

Sometimes that’s just how it goes. We’d had a full day on the water, everyone was hungry, and we were just eating dinner and enjoying our last night together.

And then, of course, we finished the evening in the hot tub.

A Little About Norris Lake

Since I’ve gotten questions about where we were, we stayed on Norris Lake near LaFollette, Tennessee.

This was our second year coming here, and it’s such a fun place for this kind of trip. We rent a pontoon boat and tubes, and there are miles and miles of open water to explore and tube on. There are also some fun marinas to stop at along the way.

It’s a very different kind of vacation because you’re really spending most of your days at the house or on the water rather than going out to restaurants or doing lots of activities away from the lake.

Which, of course, means you need a LOT of food.

But we’ve really enjoyed it the past two years, and I would absolutely come back again.
