Thursday: Project Day, My Pizza Leftover Hack & a Night at Book Club
Got up this morning and did a quick breakfast for the kids.
Bacon, bagels, cereal, waffles, chicken sausage. All the usual things.
Then we packed up and got on the road for Project Day at our homeschool co-op.
And I have almost no pictures to show you today.
Because I was busy.
Project Day at Co-op
I’m the director of our homeschool co-op, and Project Day is one of those days when I’m running around making sure everything is happening where and when it’s supposed to.
We had spouses, grandparents and friends joining us to see all the kids’ projects, which made it especially fun.
Our Project Day is a little like a science fair, except the kids can present on practically anything they want.
It doesn’t have to be science.
We had kids showing off LEGO creations, talking about family vacations, explaining how things work and presenting all sorts of things they’ve been learning about.
One of my kids did a project explaining why soda is fizzy.

Which is a pretty great question when you think about it.
I love that the kids get to pick something they’re genuinely interested in, learn about it and then explain it to other people.
It’s such a fun opportunity for them.
My Group Pizza Order Hack
For lunch, our co-op organized a group pizza order.
And I mentioned this on Stories, but here’s a little trick if you’re ever ordering pizza for a big group:
Consider ordering extra pizza if you’re getting a group discount.
Think about it.
You’re already getting a discounted price because you’re buying a large quantity.
So why not take advantage of that and order some extra for your family to bring home?
Just bring a cooler and some gallon Ziploc bags.

Once the pizza has cooled enough to pack safely, put the extra slices into bags and into your cooler. Keep them properly chilled until you can refrigerate or freeze them at home.
Now you have pizza for another meal, and you didn’t have to pay the normal individual-pizza price.
I love little opportunities like this.
You’re already ordering the food.
You’re already picking it up.
You’re already feeding everybody.
Might as well get another meal out of it.
Lunch at the Playground
Along with the pizza, I packed our cooler with the usual assortment of snacks.
Fruit.
Vegetables.
Homemade summer sausage.
Drinkable yogurts.
Just a bunch of easy things that people could grab throughout the day.
After Project Day, we all headed over to a local playground to eat pizza and enjoy the beautiful weather.
The kids played, everybody ate, and it was a really nice way to finish our co-op day.
And again, almost no pictures.
Sometimes you’re just busy living your life.
Dinner Was Whatever Was Left in the Refrigerator
When we finally got home, I put away all the extra pizza and got to work on dinner.
Thankfully, I still had a good amount of taco meat from the big batch I made Monday night.
So I pulled that out, reheated it and used up a bunch of it for dinner.
I also made some side salads.
Nothing fancy.
Nothing new.
Just using the food we’d already cooked earlier in the week.
And I completely forgot to take a picture of dinner.
Because as soon as we finished eating, I had to clean everything up and get ready to leave again.
A Night at Book Club
I had my Well-Read Mom book club tonight.
I joined this group when we first moved here because I needed to make friends.
And it’s turned out to be such a nice thing.
I’ll admit, I don’t always love the books they choose.
And I don’t always manage to read every single one.
But I’ve really enjoyed getting to know the ladies, and it’s been a wonderful way to build friendships.
This month’s book was So Big by Edna Ferber.
And this one I actually do recommend.
It’s a really interesting story about motherhood, work, ambition and what it means to live a successful life.
Definitely worth reading.
So that’s Thursday.
Not much cooking.
Not many pictures.
But a really full day.
