Saturday: Peach Oat Bake, Steak Leftovers & Neighborhood Party

Saturday started with more proof that all that bacon prep before our trip was worth it. The bacon just keeps on giving.

An Easy Saturday Breakfast

I pulled some more Costco bagels out of the freezer and reheated some of our pre-cooked bacon. I still haven’t had to make another batch since we got home, which feels like a gift from Past Me.

I also made my one-pan peach oat nut bake. My teen had hers with Greek yogurt, and I ate mine plain with just a little drizzle of maple syrup over the top.

So good, especially with fresh peaches right now.

Leftover Flank Steak for Lunch

At lunch, I kept working through the flank steak from Friday night’s dinner.

I sliced it really thin and used it a few different ways. Chris had an open-faced steak sandwich, my teen had a regular steak sandwich, and I made myself one of my non-salad salads.

Basically: all the vegetables, no lettuce.

I added the sliced steak and some vinaigrette, and that was lunch. At this point, I probably only have enough flank steak left for one good snack portion, which is exactly what I want. Cook once, keep turning it into different things until it’s gone.

Lowe’s Build Project

After lunch, I took my four younger kids to Lowe’s for their monthly kids’ build project.

This month was a Dino Paw Patrol project, which they thought was very fun.

It was also incredibly loud.

Just imagine an entire area filled with small children simultaneously wielding hammers. I have tremendous respect for whoever works that event all day because I could not do it.

The Neighborhood End-of-Summer Party

Then it was time for our neighborhood’s big end-of-summer party.

My husband is on the board and helps with the event, and around 2:00 we were basically at a go/no-go launch situation because the weather was looking very questionable.

But they decided to go for it.

All systems were go.

We had bounce houses, pools, shaved ice, a balloon artist, a live band and pizza delivery. My teen even did face painting.

And, of course, copious amounts of shaved ice were consumed.

It ended up being a really fun afternoon.

Second Dinner Is Still Dinner

About three hours later, I brought three of the kids home, got everybody cleaned up, and naturally they needed second dinner.

Because apparently pizza and unlimited shaved ice at a neighborhood party does not constitute enough food when you’re a kid.

So they ate again.

Then Chris got home later, and since neither of us can eat the pizza from the party, I made him a really quick dinner with what we already had.

One-Pan Warm Steak Pasta

I should have filmed this one because it turned out really well, but at that point I was just trying to get food on a plate.

I seared a little more of the leftover flank steak in a hot pan and added some of the angel hair pasta I’d cooked Thursday night.

In a separate bowl, I quickly mixed together:

  • Balsamic vinegar
  • Olive oil
  • Honey
  • Salt
  • Pepper
  • Garlic powder
  • Italian seasoning

Then I tossed in some fresh tomato and olives and added the hot steak and pasta straight from the pan.

The warmth from the pasta and steak mixed with the vinaigrette and tomatoes, and it turned into this really simple warm steak pasta dish.

Chris loved it.

And I loved that Saturday dinner didn’t require me to cook an entirely new meal. I just kept transforming the food we’d already made.

Tomorrow, though, we’re moving on. I have ground beef from Friday’s Costco trip sitting in the refrigerator, and that is definitely getting dealt with at lunch.
